Carrot cake recipe

2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
4 cups carrots, grated 
4 eggs
1 1/3 cups vegetable oil
3/4 cup chopped walnuts (optional)


Preheat oven to 350 degrees F and grease a 9x13pan.  Sift together all the dry ingredients and set aside.

In a large bowl, mix together the sugar and eggs until thick.  Stir in the oil.  Gradually mix in the dry ingredients.  Fold in the carrots (and nuts if using). Pour into the pan.

Bake for 40 to 45 minutes or until a toothpick inserted in the middle comes out clean. Cool.
